What do Ranger Cookies have to do with creativity, anyway? This is not a food blog. I am not a professional chef or baker. I am a Creative Resource. Sometimes creativity means to be flexible and change things up. So, since it is National Cookie Day, I am going out of my normal area and posting two recipe options for you.
First, is my favorite. Ranger Cookies. They are a chewy and yummy alternative for anyone who likes oatmeal cookies. The recipe comes from my Aunt Faye, and was also made by my cousin Diana (her daughter). While my daughter likes them with chocolate chips, I prefer them without (despite my fondness for chocolate).

RANGER COOKIES

Ingredients:
½ cup margarine or butter
½ cup brown sugar
½ cup white sugar
1 egg
½ tsp vanilla
1 cup flour
½ tsp baking soda
¼ tsp baking powder
1 cup oatmeal
1 cup corn flakes
½ cup coconut

Directions:
Preheat oven to 350°. In a large bowl or stand mixer, cream butter and sugars until light and fluffy. Beat in eggs and vanilla. Gradually add the flour, baking soda, baking powder and mix well. Stir in the oats, cereal and coconut. Then, drop spoonfuls of the mixture onto baking sheets. Bake about 9 minutes or until golden brown. Remove and cool on wire racks.

Wait. Is that too much work? Not a fan of oatmeal in your cookies? Okay, here is another option for you. Grandma Fran called them Cheater Cookies because they are so easy that it feels like you are cheating the whole baking game when you make them. It is a box of cake mix that makes them so easy. Yes, a whole box of the cake mix powder from a box. No need to add the other ingredients on the box – just the 3 other ingredients listed below (plus the optional ones if you wish). The flavor is up to you. When you want to be a fancy cheater, you can add in something extra. Grandma would use a chocolate cake mix box and add in white chocolate chips, or a lemon cake mix and top each one with a pecan half. I found that a white or vanilla cake mix hosted m&m’s or mini m&m’s equally well.

CHEATER COOKIES

Ingredients:
¼ cup margarine or butter
½ cup milk
1 egg
1 box cake mix (your choice of flavor)
Optional extras like chips, nuts or candy.

Directions:
Blend all the ingredients and drop them on a cookie sheet. Bake at 350 for about 11-14 minutes.
